Broccoli Super Soup

  1. 4 c broccoli
  2. half head cauliflower
  3. 2 russet potatoes
  4. 4-5 sliced mushrooms
  5. 1-2 minced onions
  6. 6-8 cloves garlic
  7. 6 cups veggie broth
  8. 1 c almond milk
  9. 1-2 tbsp olive oil
  10. 2 tsp garlic powder
  11. 2 tsp onion powder
  12. 1-2 tsp salt


1.   Pot #1 Mince

Mince onions and garlic in a pot with 1-2 tbsp olive oil.

2.   Pot #1 Add Chunked Veggies

Cut 1 russet potato, all of your cauliflower and three cups of broccoli into chunks. Add to your pot of onions and garlic once they are browned.

3.   Pot #1 Add Broth

Pour veggie broth into the same pot. Lower the heat and let it simmer covered for 15 minutes. Start working on the second phase of the recipe.

4.   Pot #2

In another pot, start boiling water. Add the other russet potato cut into small chunks, mushrooms, the last cup of broccoli (cut into chunks) and let it boil on low for 5-8 minutes. Feel free to add any other veggies you like.

5.   Pot #1 Blend

Once pot #1 has simmered for 15 minutes, add it all to a blender along with 1 c almond milk, garlic powder and onion powder. Blend until it is very smooth. Be careful not to overfill your blender. Then pour into a large bowl for serving.

6.   Combine

Strain the veggies from pot #2 then add them to the serving bowl with the blended soup from pot #1. Salt to taste and enjoy!
