Devyn's Tofu scramble

# Guest Recipe



  1. 1 14 oz. Package of Extra Firm Tofu
  2. 1/2 red onion diced
  3. 2 medium sized vine tomatoes
  4. 1/3 c Nutritional Yeast
  5. 1/3 c almond milk
  6. 1 handful of spinach
  7. 2 tbsp olive oil
  8. 1 tsp turmeric
  9. 1/4 tsp salt (use black salt for more eggy taste)
  10. 1/4 tsp black pepper


  1. 1/2 Avocado
  2. Salsa


1.   Cook Onions

Add the olive oil to a medium heat pan and add the onions, cook until the onions become a little translucent, about 3 minutes.

2.   crumble in tofu

Crumble the tofu into the pan. Use your hands to pick it apart or you can mash it with a fork. Continue cooking for about 3 minutes on medium heat before the next step.

3.   add the rest of the ingredients

Add the tomatoes, salt, pepper and turmeric into the pan. Cook for about 2-3 minutes then add in nutritional yeast and almond milk. Let that cook for about a minute, then add the almond milk and nutritional yeast. Let that cook for about 2 more minutes, lastly add in the spinach for one last minute of cooking.

I love adding half an avocado and some salsa on top!
